French Bloom's savoir-faire begins where great wine always begins: in the vineyard. In Limoux, in the Languedoc, an oceanic terroir gives organic Chardonnay and Pinot Noir grapes their natural acidity and complexity: harvested early, fermented, and aged for over six months in French oak and stainless steel.
What makes French Bloom different is that every wine is conceived from the start for its final expression at 0.0%. Led by Rodolphe Frerejean-Taittinger, whose expertise spans decades in Champagne and Cognac, the team makes each decision, from harvest and fermentation to ageing and blending, with this final expression in mind.
Only then do the wines undergo an innovative three-step dealcoholization process to reach 0.0% alcohol, followed by a final blending stage that defines the balance, texture and aromatic profile of each cuvée.
The result: a complex non-alcoholic sparkling wine built through winemaking at every stage
Great wine has always started with the land. For French Bloom, choosing where to grow our grapes was never a question of convenience, but of character.
Limoux, widely recognized as the birthplace of sparkling wine, was a natural choice. It was here, at the Benedictine Abbey of Saint-Hilaire, that monks were producing sparkling wine as early as 1531.
But Limoux’s significance goes beyond history. Positioned at the crossroads of Atlantic and Mediterranean influences, the region benefits from an oceanic microclimate, with moderate temperatures, regular rainfall, and a distinctive combination of clay and limestone soils.
These conditions bring freshness, natural acidity and tension to the grapes, creating the ideal foundation for the style of wines French Bloom sets out to make.
Combining French winemaking know-how with cutting-edge innovation. French Bloom’s Wine Revelation Process is a complete approach to winemaking for 0.0%, with each base wine conceived from the outset to preserve acidity, structure, texture and aromatic expression through to the final cuvée.

Naturality guides every stage of our approach. Our cuvées are crafted with no added sugar, no added sulfites and no preservatives, allowing the quality of the wine and its origins to remain at the heart of what we create.
From the vineyard to the final blend, every choice is deliberate: fewer additions, greater precision, and a deep respect for the raw materials we begin with.
Ageing plays an essential role in building the structure and complexity our wines need for their final expression at 0.0%. Selected base wines are matured for more than eight months in French oak barrels and stainless steel, allowing us to develop depth, texture and aromatic complexity while preserving freshness and precision.
The use of oak is deliberate and measured, with no sulfites added. Rather than masking the wine, it brings subtle structure and additional layers of complexity, helping create a base wine with the concentration and character needed to remain expressive after dealcoholization.
French Bloom uses an innovative three-step vacuum distillation process at low temperature to gradually bring the wine to 0.0%. The alcohol level is reduced in successive stages, from around 14% to 3%, then to 0.5%, before reaching 0.0%.
This gentle progression is designed to preserve the wine’s structure, freshness and character, creating the foundation for each French Bloom non-alcoholic sparkling cuvée.

OUR WINEMAKING TEAM
Behind every French Bloom cuvée is the combined expertise of Rodolphe Frerejean-Taittinger, CEO and technical lead, and Bertrand Degat, Chef de Cave. Rodolphe brings decades of experience in wine, Champagne and Cognac, and has led French Bloom’s technical development from the beginning. Bertrand, who joined the Maison in 2025, brings deep expertise in organic and biodynamic winemaking in the South of France.
Together in Limoux, they oversee each stage of the winemaking process, from the expression of our terroir to dealcoholization and final blending. Through meticulous base winemaking, tasting and adjustment, they preserve and refine balance, texture and finish throughout the dealcoholization process, creating 0.0% wines with the precision and complexity expected of French Bloom.
